After you change the size from your backend > Easyblog > theme > blog image

Then you have save it and clean the cache (button).

if still can't, can you provide us with your Joomla backend and FTP access so we can help you check on this?

Also provide us which photo is not get affected after you modify the size.

Done that but can't work out which image size is controlling the image sizes. Where are the instructions for the settings on this attachment.

We are sorry but there is no documentation for this yet. By the way, have you clicked on the Clean Images button: http://screencast.com/t/QVrLOEXC1k after save the image size? If you already did and it doesn't work, you can provide us your backend and FTP so we can have a better look on your issue.
