I am sorry for the delayed response.

1) I have set up recurring payments in a plan. I assume that the payments are therefore automatically taken on the day after the end date to continue the users subscription? The users subscription state an end date but nothing shows when the next payment will be taken.

Recurring payment will be done when the payment expected. The end date shown in the subscription is the expected date for the payment.

2) How does an admin cancel recurring payment but allow users to have access until the end of their current subscription for the period they have already paid for. I can only see cancel options but that seems to cancel the subscription instantly.

Once the subscription cancels then the order mark as cancel, no further recurring payment will be done. Subscription will get expire on the expiration date set from the previous payment. It will not expire immediately. It will expire on the expected expiration date.

3) If a user deletes their account, does this cancel the subscription, so stopping any future payments?

When the user account deleted then the subscription also deleted from the site. But further payment depends on the payment method which you are using. For example, in stripe recurring payment done on a cron job. So recurring payment will not come after deletion.
In the case of PayPal recurring payment done at paypal end then it sends a notification in the URL. So after subscription deletion payment will be done at paypal, you need to cancel the subscription at paypal site.

Let me know which payment method you are using, so will check and let you know.
