I have got a custom textarea field in the profiles (named organisation), which must be displayed on the userlists. How to to do that?

Each custom field contains a "unique key" under the "Advanced tab". Click on it to get the unique key. Then modify the user's list template file /components/com_easysocial/themes/wireframe/users/default.list.php and use the codes below,
